Veal cutlets can be presented in both Mediterranean and Oriental styles:

  • Lemon-rosemary classic: Fry in a pan with a little butter, garlic, fresh rosemary and a squeeze of lemon – the fine acidity perfectly complements the mild veal.

  • Oriental grilling delight: Marinated with a light mixture of olive oil, white pepper, and a touch of coriander. Grill briefly and over high heat for a juicy result.

  • Milanese style (Cotoletta alla Milanese): For those who prefer a traditional approach, lightly pound the meat and fry it in clarified butter until golden yellow.

Our preparation tip: To ensure the veal cutlet remains beautifully juicy, it should not be cooked all the way through. We recommend an internal temperature of approximately 56–58°C for a perfect, slightly pink result. Let the meat rest briefly after cooking so that the juices can redistribute.
