  • Ossobuco alla Milanese: The Italian classic! The shanks are braised in white stock, tomatoes and wine (or grape juice substitute) and traditionally served with gremolata (lemon zest, garlic, parsley).

Our preparation tip: When preparing shank slices (ossobuco), lightly score the outer silverskin of the slices in 2-3 places. This prevents the meat from curling up while frying and ensures that the slices lie flat in the pot and cook evenly.
