Inspiration from the kitchen

A whole chicken is the basis for the most magnificent dishes:

  • Dajaj Mahmar (Moroccan festive chicken): Cooked in a broth of saffron, ginger, and garlic, then roasted until crispy in the oven. Served with olives and preserved lemons (Dagmira).

  • Stuffed chicken: Fill the animal with a mixture of spiced rice, almonds and raisins, or with a spicy glass noodle and herb mixture.

Our preparation tip: For perfectly crispy skin, thoroughly dry the chicken before seasoning. Rub it generously with a mixture of olive oil (or butter), paprika, and salt. For extra juiciness, stuff half a lemon and a few cloves of garlic into the cavity before putting it in the oven!
