Inspiration from the kitchen
A coquelet calls for gentle preparation to preserve its delicacy:
- Classic from the oven: Rub the coquelet with a mix of melted butter (or ghee), a little salt and fresh thyme. At 180°C it cooks noticeably faster than a regular chicken (about 35–45 minutes).
- French style: Stuff the small bird with fresh herbs and a slice of lemon. The aroma infuses the tender meat from the inside out.
- From the grill (spatchcock): Cut the coquelet along the backbone and press it flat. This way it grills extremely evenly and becomes crispy all around in no time.
- Our preparation tip: Since the meat is very young, it doesn't tolerate overly aggressive heat for long. Cook it a bit more gently and finish with your oven's grill function at the end to give the skin its final touch.
